# Saturday bread

The bread I made on Saturday. Why? Because I can.
It tasted like bread. Really, really good bread.
- 1 kilo of baker’s flour
- 625 ml of water
- 21 g dried yeast
- 2 tblspn sugar
- 2 tblspn salt
- miscellaneous flour
Dump the flour on a clean surface; make a well in it; pour in half the water; mix the yeast, sugar and salt in, make sure the well doesn’t break; carefully mix in some of the flour by breaking the well from the inside until the water becomes as thick as porridge; mix in rest of the water; continue mixing in the water, taking care not to let the well walls break like I did; if the walls break, keep the water under control long enough to call out for someone to get a bowl to scoop the mixture into; once the flour and water are combined, knead on a floured surface with floured hands; knead some more; you should be kneading for five or so minutes; put the dough in a bowl, cover with cling wrap and walk away for thirty minutes; plonk the dough back on the floured surface and knead for another five minutes; put it back in the bowl, covered, for another hour; heat the oven up to 180C and gently, gently move the dough from the bowl to a pan; put it in the oven and gently, gently shut the door; cook for thirty-five to forty-five minutes; you wanna wait till a crust forms on top; it’ll certainly be ready when it sounds hollow if you tap the bottom.
Make sure you have some with butter and jam while it is still warm.
